Rum is distilled from the fermented juice of sugar cane, cane syrup, and molasses at 190 proof and bottled at not less than 80 proof. It is aged in non-charred barrels where it picks up very little coloring. Dark rums often have caramel added to them for color.
Not only does rum blend beautifully with other liquors, but also it goes well with fruit juices. Although rum is manufactured in nearly every country of the world from the USA to Russia and from South Africa to Australia, the best does come from the Caribbean.
There are two main types of rum; light- and heavy-bodied. The light-bodied rums are dry with only a very slight molasses flavor and these are available in two varieties; white and gold label. The gold label (dark) is usually a bit sweeter and makes good punches and the white label (light) is excellent for cocktails. The heavy-bodied rums are darker and sweeter and have a pungent bouquet, body and flavor. They are distilled by a different and slower fermentation process. This allows more time for fuller, richer molasses-like body.
